Sheet Pan Chicken Stir Fry

1.5 pounds organic chicken breast cutlets cut into 1/2 to 3/4 in pieces

1/4 cup olive oil

3 cloves Minced garlic

1/4 cup Organic Tamari (do not use soy sauce)

1/2 tsp ginger ground or freshly grated

1/2 tsp Chinese Five Spice Blend

1 tsp organic sugar

 

1 medium carrot diced

1/2 cup peas

1bell pepper and 1 red onion cut into 1/2 in pieces

1 medium zucchini cut into 1.2 inch pieces

1 cup broccoli cut into small pieces

water chestnuts

Mix chicken and vegetables together with olive oil.

Combine Tamari with garlic and seasonings.  Mix with chicken and vegetables

 

Spread Chicken and vegetables on jelly roll pan

Bake at 450 degrees (on second shelf from the top) for 10 to 15 minutes until chicken browns.  Flip and cook another 10 to 15 minutes until both sides are brown.

 

Serve alone or over white rice

Karen Redmond received her undergraduate degree from Michigan State University and a Masters Degree of Science in Health and Fitness Promotion from Marymount University.
