Beef Stir Fry

1.5 to 1.75 pounds of Top Sirloin steak, trimmed and cut into thin strips approximately2 inches in length.

1.5 cups broccoli cut into smaller pieces (1/2 inch size is ideal)

1 small red bell pepper, cut into 1.4 inch thin strips

1 to 2 heads of baby bok choy chopped into thin strips

1 medium size carrot julienne cut

2.5 TBSP Organic wheat free Tamari (do not use soy sauce)

2 cloves of minced garlic

1/2 tsp ground ginger

1/2 tsp Chinese Five Spice Seasoning

2 tsp of raw sugar.

2 cups White Jasmine rice cooked.  It’s ideal to use a rice cooker.  Make sure that you rinse the rice 2 to 3 times (until the water is clear).  I use 1 tsp of sea salt and about 1 tbsp of butter while cooking.

 

In a Wok or extra large fry/saute pan add 1 tbsp of coconut oil and garlic.  add meat and continue to stir until meet is cooked about half way.  This will take about 3 to 5 minutes.  Add all the vegetables and tamari mixture and stir.  Cover with lid and continue cooking on medium high heat. When broccoli turns bright green, remove the lid  and continue cooking until vegetable can pierced with a fork , but still have a bit of firmness.  Keep stiring constantly.

Karen enjoys working with runners and endurance athletes of all levels and all distances. She does blood lactate threshold testing, gait analysis and a musculoskeletal evaluation on all clients. Karen then develops a customized program with myofascial stretching, ELDOAS, stability and strength training. She also works with pre/post natal clients, golfers and other athletes. Karen is a competitive runner and enjoys racing distances from 5k to half marathons.
