Karen’s Sloppy Joes
1.25 pounds of organic ground beef, bison or turkey
½ finely chopped red onion
½ to ¾ cup of finely chopped zucchini
1 small bell pepper finely chopped
1 6 oz can organic tomato paste ( I use about 2/3 of the can)
4 cloves minced garlic
½ Tsp to 1 TBSP mild chili powder
1 tsp sweet paprika
1.5 tsp oregano
1 TBSP brown sugar
Sea salt and fresh ground pepper to taste
Saute onion, zucchini, bell pepper and garlic with a bit of butter for 2 min then remove from heat.
Brown the meat.
Add the vegetables to the meat, tomato paste and ½ to 3/4 cup of water until the consistency is thick. Stir until tomato paste is dissolved. Add paprika, chili powder, oregano, brown sugar, salt and pepper.
Serving ideas:
1. on Udis or Canyon Life Gluten Free buns, hard taco shells or over lettuce
2. As an appetizer with tortilla chips or slices of Jicama
3. When reheating in a skillet add water and heat on low.
