**Use all Organic Ingredients
1 Small Seedless Cucumber. Peel stripes, slice into 1/2 inch width discs and cut into quarters
1/2 to 3/4 cup small Bell pepper cut into 1/2 inch pieces
1/2 to 3/4 cup Grape Tomatoes cut in half or quarters if they are large.
Additional ingredient (add one):
*1/2 small zucchini cut into 1/2 inch slices and quartered
*1/2 cup artichoke hearts quartered
*1/2 cup hearts of palm quartered
Combine vegetables in a bowl
Dressing:
3 TBSP unfiltered Olive Oil
2 TBSP red wine vinegar or balsamic vinegar
1/2 tsp minced garlic
Fresh Ground Pepper
1/4 tsp finely ground sea salt
1.5 tsp Greek Oregano
1 tsp Basil
Whisk ingredients together
Lightly pour dressing over vegetables and toss. Reserve extra salad dressing. This is a family and friends favorite dressing to use on any type of salad
