Creamy Lemon Butter Sauce

 

Total time to make is about 3 minutes!

1 TBSP plus 1 tsp organic fresh squeezed lemon juice (or you can use it from a jar)

1 small clove of fresh minced garlic (you can leave this out if you want)

dash of sea salt

dash of fresh ground pepper

4 TBSP organic butter divided (put into freezer), do not let it sit out.  

Bring lemon juice an garlic to a boil, let it boil for about 1 minute.

On medium high heat, slowly add 1 piece of butter at a time, whisking it together with the lemon juice as it melts.  Keep whisking until all the butter is added.  The result is a creamy sauce without any added flour.

 

Drizzle over vegetables, cooked fish, chicken or anything you desire.  This is so easy and so delicious!!

Karen Redmond received her undergraduate degree from Michigan State University and a Masters Degree of Science in Health and Fitness Promotion from Marymount University. She has been working in the health and fitness field for 20 years. She is a Master CHEK Practitioner and Holistic Health and Lifestyle Coach. Karen enjoys working with runners and endurance athletes of all levels and all distances. She does blood lactate threshold testing, gait analysis and a musculoskeletal evaluation on all clients. Karen then develops a customized program with myofascial stretching, ELDOAS, stability and strength training. She also works with pre/post natal clients, golfers and other athletes. Karen is a competitive runner and enjoys racing distances from 5k to half marathons.
