Chicken Kofta

1.5 lbs of ground chicken (1/2 white and 1/2 dark or can use all white). You can also use ground lamb or turkey

1/2 sweet onion grated

1/2 cup fresh cilantro chopped

1/4 cup fresh parsley chopped

1 tsp fine sea salt

1 tsp mild chili powder

1.5 tsp sweet Hungarian Paprika

1/2 cup gluten free panko or other bread crumbs

Combine ingredients in a bowl – it’s helpful to use plastic food prep gloves. Place in fridge for 1/2 hour to 1 hour to chill

Soak Wooden Skewers in water. I use the shorter ones- or you can cut the longer ones

Using gloves form the chicken mixture into 3 inch long sections completely around the skewers.

Note: you can prepare ahead of time- when I did this I placed the chicken skewers in a 9x 13 oblong pyrex dish and covered with a lid.

Place on a greased cookie sheet or jelly roll pan

Cook: 425 degrees with Convection approximately 5 minutes on a side- then flip with a spatula. You will see that the chicken becomes opaque. If not using convection- the cooking time will be slightly longer.

Serve with Tzatziki Sauce

She works with people in person in the Chicago area, North Carolina and virtually. Karen was a competitive runner for years and now enjoys competing in Stand UP Paddle Board Racing .
