Sweet Potato Fries

2 to 3 small organic sweet potatoes (I prefer the garnet yams).  Peel and slice into strips that are 1/4 “

Coat in potato starch

Cover with melted butter and then sprinkle cinnamon/salt over top.

Lie flat on cooking sheet so they do not overlap.  Cook at 425 degrees in oven for 20 to 25 minutes.  Flip the fries 1 time about half way through


You can also cut into 1/8 in large slices and prepare the same way

Karen enjoys working with runners and endurance athletes of all levels and all distances. She does blood lactate threshold testing, gait analysis and a musculoskeletal evaluation on all clients. Karen then develops a customized program with myofascial stretching, ELDOAS, stability and strength training. She also works with pre/post natal clients, golfers and other athletes. Karen is a competitive runner and enjoys racing distances from 5k to half marathons.
