Shrimp Burgers

2 lbs small to medium wild caught shrimp.  Peel, devein and chop

1/4 cup finely chopped red bell pepper

2 cloves minced garlic

1/4 tsp sea salt

1.5 tsp Old Bay Seasoning

1/2 cup gluten free panko bread crumbs (I like Ian’s)

2-3  TBSP finely chopped parsley

2 egg whites

Combine ingredients 

 

In an extra large skillet using2 TBSP of  butter or coconut oil or ghee…

FIRMLY Press the patties down into the pan making them about 1/2 thick. Cook on medium heat for 3-4 minutes on 1 side then flip.  Should be very crisp.  I use a stainless skillet and a metal spatula.  Flip and press down into pan again.

Karen Redmond received her undergraduate degree from Michigan State University and a Masters Degree of Science in Health and Fitness Promotion from Marymount University. Karen then develops a customized program with myofascial stretching, ELDOAS, stability and strength training. She also works with pre/post natal clients, golfers and other athletes. Karen is a competitive runner and enjoys racing distances from 5k to half marathons.
