Persian Chicken Kebabs

1.5 to 2 lbs of organic chicken cut into small pieces (you can also use chicken tenders)

3 TBSP Organic whole milk plain yogurt

4 cloves minced organic garlic

1/8 cup finely chopped or grated organic red onion

1/3 cup organic unfiltered olive oil

1 tsp sea salt

1/4 tsp ground black pepper (I use multicolored peppercorns)

2 TBSP lemon juice

Lemon zest

1 tsp Saffron..steep into 2 TBSP hot water for 30 minutes

Whisk ingredients together thoroughly and marinate the chicken for a minimum of 8 hours.  I usually marinate for 24hrs.  I prep the marinade the night before as I am cooking dinner.  Make sure to add the both the liquid from steeping and the saffron threads to the marinade.

Place on metal skewers and for wood skewers make sure to soak in water for 30 minutes prior to putting the meat on.

Cook on a grill at 400 degrees.  Depending on the size of the chicken pieces it will take 10 to 15 min to cook.  You can also broil them.

Serve with Saffron rice and vegetables.
