Mojo Chicken

2 lbs chicken breasts, regular or cutlets.  Can also cube the chicken to make kabobs

Marinade:

1/2 tsp sea salt

1/4 tsp fresh ground pepper 

Lime Zest

2 TBSP fresh lime juice

1/2 cup olive oil

3 cloves minced garlic

1/4 fresh chopped cilantro (2 tsp dried cilantro)

1/8 cup fresh chopped oregano (1 tsp dried oregano)

1 tsp cumin

C0mbine all ingredients.

 

Tenderize the chicken or use a fork and pierce all over. Thoroughly cover the chicken in the marinade.  I use a glove and take the pieces and cover in marinade.  Refridgerate and marinate at least 6 hours.  I prefer over night because it increases the flavor and tenderness of the chicken

 

Grill the chicken.  Serve with yellow rice, saffron rice and vegetables.

Karen Redmond received her undergraduate degree from Michigan State University and a Masters Degree of Science in Health and Fitness Promotion from Marymount University. Karen enjoys working with runners and endurance athletes of all levels and all distances. She does blood lactate threshold testing, gait analysis and a musculoskeletal evaluation on all clients. Karen then develops a customized program with myofascial stretching, ELDOAS, stability and strength training. She also works with pre/post natal clients, golfers and other athletes. Karen is a competitive runner and enjoys racing distances from 5k to half marathons.
