1.5-2 lbs organic chicken breast cutlets
Marinade
2 TBSP organic lime juice
1/3 cup organic olive oil
1/4 cup fresh chopped cilantro
1 tsp sea salt
1/4 tsp fresh ground pepper
1 tsp ground cumin
1 tsp Sweet Hungarian Paprika
1 tsp organic sugar
Combine ingredients and marinate chicken for 4 hrs- to overnight
Vegetables
1 Red Bell Pepper cut into thin strips
1 Orange or Yellow Bell Pepper cut into thin strips
1 Small Red onion cut into thin strips
2 cloves crushed garlic
2 TBSP fresh chopped cilantro
1/2 small zucchini julienne
Grill chicken and cut into strips
Sautee Vegetables with butter or olive oil
Combine chicken and vegetables and serve on corn tortillas,, cassava flour tortillas or over lettuce
Top with fresh chopped tomato or pico de gallo and Cotija cheese
