Sweet and Sour Chicken Meatballs

The Meatballs

3/4 pound ground dark meat chicken

3/4 pound ground white meat chicken

1 small zucchini grated

1/2 red onion grated

3 cloves minced garlic

1 tsp sea salt

1/4 tsp fresh ground pepper

1 TBSP parsley

Wearing gloves, combine ingredients and roll into meatballs.  Place on jelly roll pan and cook at 375 degrees for 15 minutes

Sauce

1 14.5oz can of whole peeled tomatoes (not sauce)

1 15 oz can tomato sauce

15 oz chicken broth

1/4 cup packed brown sugar

1/4 cup distilled white vinegar

1 8 oz can of crushed pineapple with juice

2 medium carrots cut into 1/2 inch chunks

1 red onion cut into 1/2 inch pieces

1 large bell pepper cut into 1/2 inch pieces

1.5 tsp salt

1.5  TBSP corn starch mixed with 1/3 cup cold water (mix thoroughly and then add to sauce)

Simmer ingredients for 10 minutes on the stove 

Stove Top Version:

Combine all ingredients including meatballs into a covered pot and cook on medium for 15 minutes

Crock Pot

Cook on low for 2 hours

 

Serve over:

  1. Spiralized Zucchini (can either boil or saute noodles to cook them)
  2. White Jasmine Rice

She has worked with both elite and amateur athletes in all sports evaluating biomechanics, posture, strength and flexibility then developing a customized program with myofascial stretching, ELDOAS, stability and strength training. She works with people in person in the Chicago area, North Carolina and virtually. Karen was a competitive runner for years and now enjoys competing in Stand UP Paddle Board Racing .
