Rice Cooker Risotto

The easiest and most delicious, healthy easy to make risotto! Your Rice Cooker must have a “porridge or oatmeal setting” in order to make this. The Zojurushi Rice Cooker is one of the best all around rice cookers.

-1 Cup Organic Arborio Rice make sure it is leveled off at top when measuring.

2.5 Cups Organic Chicken Broth

1 tsp sea salt

1 TBSP Organic Grass Fed Butter

1-2 cloves minced garlic

Choose your Mix Ins:

You can add anything you want to create a delicious and healthy side dish :

  1. 2 cups chopped sautéed or wilted spinach-
  2. 1 cup frozen fire roasted corn I also add 6-7 Saffron threads steeped in 1 TBSP hot water for 30 minutes to intensify the flavor
  3. 1 Cup Peas and Carrots
  4. 1 cup diced roma tomatoes and 1/2 cup chopped basil
  5. 1/2 cup chopped cilantro and 1 TBSP lime juice
  6. 1 cup finely chopped broccoli

Put all the ingredients at one time into the rice cooker. Choose the Oatmeal or Porridge Setting. Typically it will be 50-60 minutes of cook time. At approximately 30 minutes open up the top of the cooker and stir. Repeat stirring every 10- 15 minutes and checking for the consistency as you do this.

Optional: When finished stir in 1/8 to 1/4 cup of shredded or grated parmesan , asiago or romano cheese

She specilializes in corrective exercise, holistic lifestyle and nutrition coaching, she sees a wide range of clients including those with orthopedic injuries and back pain. She has worked with both elite and amateur athletes in all sports evaluating biomechanics, posture, strength and flexibility then developing a customized program with myofascial stretching, ELDOAS, stability and strength training. She works with people in person in the Chicago area, North Carolina and virtually. Karen was a competitive runner for years and now enjoys competing in Stand UP Paddle Board Racing . When she is not working with clients you will find her creating healthy and delicious recipes or out on her paddle board.
