Chimichurri Steak

Marinade for Steak (skirt steak or flank steak )

1/2 tsp ground cumin

4 cloves garlic crushed

3 TBSP lime juice

1/4 cup organic olive oil

1 tsp sea salt

1/4 tsp fresh ground pepper

2 TBSP fresh chopped cilantro

1 TBSP organic sugar

combine ingredients in glass dish.  Thoroughly coat meat, cover and marinate in fridge for 24 hours

 

Chimichurri Sauce

1 cup fresh cilantro leaves

1 cup fresh parsley leaves

2 TBSP dried Greek Oregano

1 TBSP fresh lemon jiuce

1/2 cup organic olive oil

3 TBSP Red Wine Vinegar

1.5 tsp sea salt

6-7 cloves garlic

1/4 cup red onion

1/4 tsp fresh pepper

 

In a food processor (using serpentine blade)

  1.  Chop Garlic (by pulsing)
  2. Slowly add remaining ingredients and pulse, so that the ingredients stay chunky and do not get pureed

You can also finely chop all the ingredients by hand and combine

(Can be stored in fridge for up to 2 weeks)

 

Grill steak 3-4 minutes each side so it is medium to Medium Rare.  Serve with chimichurri sauce

She has worked with both elite and amateur athletes in all sports evaluating biomechanics, posture, strength and flexibility then developing a customized program with myofascial stretching, ELDOAS, stability and strength training. She works with people in person in the Chicago area, North Carolina and virtually. Karen was a competitive runner for years and now enjoys competing in Stand UP Paddle Board Racing .
