2.5 -3 cups shredded Chicken breast. You can poach the chicken (see my recipe), chop up grilled chicken or use rotisserie chicken. Cut into small pieces
1/4 finely diced red onion
1/3 cup finely diced red bell pepper
1/3 cup fire roasted corn
1/4 chopped tomato
1/4 cup grated cotija cheese
- Use Cilantro Lime Dressing (my recipe) and lightly toss all ingredients
Serve over mixed greens, arugula or with tortilla chips
