1 LB Lump Crab Meat- make sure there are no shells
1/4 cup finely diced red bell pepper
1/4 finely diced English cucumber
2 TBSP finely diced red pepper
1/4 fire roasted corn
1 TBSP fresh chopped basil
Dressing
1 TBSP organic dijon mustard
1 small organic garlic clove crushed
Juice of 1 whole organic lemon
1/2 tsp sea salt
1/4 tsp fresh ground pepper
1 tsp organic sugar
3 TBSP organic olive oil
(Combine ingredients of dressing- whisk and place aside)
In a large bowl combine the other ingredients. Gently stir to combine the dressing.
Serve over organic greens, on crostini, crackers or sourdough bread
