Hashbrown Quiche

Preheat Oven to 425 degrees

24 oz Organic uncooked frozen shredded hash browns-

4 TBSP Organic melted butter

4 Free Range Eggs beaten

1 cup organic half and half

1 tsp sea salt

12 oz assorted organic cheeses- Monterey Jack, Colby Jack, Parmesan, Asiago

1.5-2 cups of mixins. You can use turkey sausage, bacon, zucchini, spinach, onions, etc.

If using vegetables- sauté the veggies in a bit of butter with minced garlic and onions which will intensify the flavors. Let the veggies cool before adding to egg mixture .

Lightly butter a 8 x 13 oblong glass, porcelain or stoneware pan. Press the hash browns into the pan and up the sides. Blot with paper towel to remove excess water. Brush with melted butter. Bake 25 minutes at 425 degrees

Reduce Oven to 350 degrees

Combine: eggs, half and half, cheese and mix ins and salt. Pour over hash brown mixture. bake 40-50 minutes until set.

She specilializes in corrective exercise, holistic lifestyle and nutrition coaching, she sees a wide range of clients including those with orthopedic injuries and back pain. She has worked with both elite and amateur athletes in all sports evaluating biomechanics, posture, strength and flexibility then developing a customized program with myofascial stretching, ELDOAS, stability and strength training. She works with people in person in the Chicago area, North Carolina and virtually. Karen was a competitive runner for years and now enjoys competing in Stand UP Paddle Board Racing . When she is not working with clients you will find her creating healthy and delicious recipes or out on her paddle board.
