Dijon Chicken

 

  1. 4 Organic boneless skinless chicken breasts. You can also use split chicken breasts or chicken breast cutlets

Split Breasts with skin-slice open the breast horizontally and pierce through the skin and underside

Boneless Chicken Breasts- thoroughly pierce with a fork 

2. Marinade:

-1/3 cup organic dijon mustyard

-1/2 tsp cayenne pepper (optional)

-1/3 cup olive oil

-2 TBSP red wine vinegar

-1 TBSP lemon juice

-1 TBSP brown sugar

-2-3 cloves minced garlic

-1/2 tsp sea salt

-fresh ground pepper

 

Marinate chicken in a glass pyrex or porcelain dish for  at least 3 hours, overnight is preferable

Grill over medium heat 

serve with your favorite vegetables

Karen Redmond received her undergraduate degree from Michigan State University and a Masters Degree of Science in Health and Fitness Promotion from Marymount University. Karen was the owner of North Shore Smart Bodies located in Northbrook, Illinois for 24 years and opened up Coastal Heath and Fitness in Coastal North Carolina in 2022. She specilializes in corrective exercise, holistic lifestyle and nutrition coaching, she sees a wide range of clients including those with orthopedic injuries and back pain. She has worked with both elite and amateur athletes in all sports evaluating biomechanics, posture, strength and flexibility then developing a customized program with myofascial stretching, ELDOAS, stability and strength training. She works with people in person in the Chicago area, North Carolina and virtually. Karen was a competitive runner for years and now enjoys competing in Stand UP Paddle Board Racing . When she is not working with clients you will find her creating healthy and delicious recipes or out on her paddle board.
